The holidays are a special and busy time of year! The shopping, holiday parties, baking, cooking, wrapping and decorating can wear you down at times and if you’re like me and have a desire to make every year better then the next, then it can be downright exhausting! I am the host for the holidays, my house is full most days during that time, either making cookies or pasta with the nieces prepping for an Italian Christmas Eve to an open house New Years Eve Party…. we are always making holiday memories!
I have learned throughout the years to always take some time for myself to rejuvenate, so while baking cookies; stash some away just for you. There is nothing better than being wrapped in a blanket in a quiet room, enjoying a great cookie!
These cookies are my favorite stash!
Holiday Star Fruit Cookie
2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter
1/2 cup sugar
1 teaspoon vanilla extract
1/2 cup pretzels-broken into small pieces
2 Star fruit-sliced
1/4 cup brown sugar
In a bowl mix flour, baking powder and salt together. With an electric mixer, cream together sugar and ½ cup butter until pale and fluffy. Mix in egg and vanilla. Slowly mix in flour on a low speed until all flour is mixed in. Take ¾ of the batter out and form into a disk, wrap in plastic wrap, place in refrigerator. Mix in pretzels pieces to remaining batter and mix until just combined. Make dough into a disk, wrap in plastic wrap and refrigerate for about 20 minutes.
Preheat oven to 325 degrees.
Roll out each dough disks to about 1/8 of an inch thick on a floured surface. With two different size star cookie cutters, cut 20 stars with the larger star cutter with butter cookie dough. Cut 20 smaller star cookies with the pretzel cookie dough. Place the larger stars onto a large cookie sheet lined with silicone pad/parchment paper, top each cookie with a smaller star then top each with a slice of star fruit.
In a small sauce pan melt brown sugar and remaining butter. Brush each cookie with butter and sugar mixture and bake for 10-17 minutes, depending on the size of the cookie. Take cookies out of oven, let cool for a couple of minutes, sprinkle each cookie with sprinkles, and transfer onto a cooling rack to cool completely. Enjoy!
Makes about 20 cookies-depending on size
