The season is finally here and for me it was long awaited! I have been eager to bring out all my favorite summer recipes that have been in hiding over this past winter season. Al fresco dining is one of my favorite ways to entertain, even on a weekday night, if you keep the menu simple! This recipe is one of my favorites for just that reason; it’s easy, delicious and ready to impress!  Perfect for your next gathering! 



Italian Style Summer Grilled Chicken

12 chicken thighs

1 cup olive oil
1/3 cup white balsamic vinegar
1/4 cup fresh chives – diced
1/3 cup good quality honey
salt and pepper to taste

Tomato Salad
1 1/2 cups yellow tomatoes-your favorite-sliced
1 1/2 cups red heirloom tomatoes-your favorite-sliced
2 tablespoons olive oil
1 tablespoon dried Italian seasoning
salt and pepper to taste

Season chicken with salt and pepper on both sides.

Whisk all marinade ingredients together in a large bowl.  Add chicken to marinate place in refrigerator for a least an hour or up to 24 hours.

Cook chicken on preheated grill on medium heat for about 10 minutes on each side, or until it is cooked through.

In a medium size bowl add tomato salad ingredients, stir until combined.

Place cooked chicken on a serving platter, pour remaining dressing over chicken and top with tomato salad and serve.
